Ingredients

  • 8 oz penne pasta
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup mozzarella cheese, shredded
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook the penne pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and Cajun seasoning, then add them to the skillet. Cook for about 5-7 minutes on each side until fully cooked. Remove from the skillet and let rest before slicing.
  3. In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
  4. Pour in the heavy cream, stirring to combine, then add the shredded mozzarella cheese and Cajun seasoning. Stir until the cheese is melted and the sauce is creamy.
  5. Add the cooked penne to the skillet and toss to coat in the sauce.
  6. Slice the chicken and arrange it on top of the pasta. Garnish with fresh parsley before serving.
