- 8 oz penne pasta
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup mozzarella cheese, shredded
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Cook the penne pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and Cajun seasoning, then add them to the skillet. Cook for about 5-7 minutes on each side until fully cooked. Remove from the skillet and let rest before slicing.
- In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream, stirring to combine, then add the shredded mozzarella cheese and Cajun seasoning. Stir until the cheese is melted and the sauce is creamy.
- Add the cooked penne to the skillet and toss to coat in the sauce.
- Slice the chicken and arrange it on top of the pasta. Garnish with fresh parsley before serving.
