- 4 medium-sized potatoes, cut into wedges
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine olive oil, minced garlic, Parmesan cheese, oregano, salt, and pepper.
- Add the chicken thighs and potato wedges to the bowl, tossing to coat evenly.
- Arrange chicken and potatoes in a single layer on a sheet pan.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and potatoes are tender. Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C).
- Garnish with fresh parsley if desired and serve hot.
Notes
For a crispier chicken skin, broil for the last 5 minutes of cooking. Marinate the chicken in olive oil and garlic for added flavor, if desired.
