Ingredients

  • 4 bone-in chicken thighs
  • 4 medium-sized potatoes, cut into wedges
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine olive oil, minced garlic, Parmesan cheese, oregano, salt, and pepper.
  3. Add the chicken thighs and potato wedges to the bowl, tossing to coat evenly.
  4. Arrange chicken and potatoes in a single layer on a sheet pan.
  5. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and potatoes are tender. Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C).
  6. Garnish with fresh parsley if desired and serve hot.

Notes

For a crispier chicken skin, broil for the last 5 minutes of cooking. Marinate the chicken in olive oil and garlic for added flavor, if desired.
