A comforting Puerto Rican dish that combines savory garlic shrimp with creamy mashed plantains.

- 1 pound shrimp, peeled and deveined
- 4 medium green plantains, peeled and chopped
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon butter
- 1/4 cup chopped cilantro (optional)
- Lime wedges (for serving)
Instructions
- In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp, salt, and pepper. Cook until the shrimp are pink and opaque, approximately 3-4 minutes. Remove the shrimp and set aside.
- In the same pot, add the chopped plantains and cook, stirring occasionally, until golden and tender, about 8-10 minutes.
- Remove the pot from heat. Mash the plantains in the pot with a fork or potato masher, adding the chicken broth gradually until you achieve a smooth consistency.
- Stir in the cooked shrimp and butter to the mashed plantains until well combined.
- Serve in a mold or bowl, and garnish with chopped cilantro and lime wedges for an added zing.
Notes
Avoid overcrowding the pot when sautéing the shrimp, and consider adding a splash of white wine for enhanced flavor.
