These no-bake gluten-free chocolate quinoa bites are crunchy, chocolaty, and perfect for a quick snack or dessert.

- 1 cup puffed quinoa
- 1/2 cup dark chocolate, melted (70% cacao recommended)
- 2 tablespoons honey or maple syrup
- 1/4 teaspoon vanilla extract
- A pinch of salt
- Optional: 1–2 tablespoons peanut or almond butter
- Optional: 2 tablespoons finely chopped toasted nuts
- Optional: 2 tablespoons dried cranberries, raisins, or chopped apricot
Instructions
- In a large bowl, combine the puffed quinoa and a pinch of salt.
- In a separate bowl, mix the melted dark chocolate, honey (or maple syrup), and vanilla extract until smooth. If using nut butter, whisk it into the chocolate mixture now.
- Pour the chocolate mixture over the puffed quinoa and stir until well combined, ensuring each puff is coated.
- Line a baking sheet with parchment paper.
- Using your hands or a small cookie scoop, form small bites or clusters and place them on the baking sheet. Press lightly to compact them.
- Refrigerate for about 30 minutes to set.
