Description

A delightful gluten-free coffee cake infused with cinnamon, perfect for cozy mornings and gatherings.


Ingredients

  • 1/2 cup salted butter, softened
  • 2/3 cup applesauce
  • 2 large eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp salted butter, melted (for filling)
  • 1 tbsp oat flour (for filling)
  • 2 tbsp white sugar (for filling)
  • 1/2 tbsp cinnamon (for filling)
  • 1/4 cup salted butter, slightly softened (for crumble topping)
  • 1/4 cup light brown sugar (for crumble topping)
  • 1/4 cup almond flour (for crumble topping)
  • 1/2 cup oat flour (for crumble topping)
  • 2 tsp cinnamon (for crumble topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened butter, applesauce, eggs, sugar, and vanilla extract. Mix until smooth.
  3. Add in the almond flour, oat flour, baking powder, and salt. Blend until the batter is uniform.
  4. In a separate bowl, mix the melted butter, oat flour, white sugar, and cinnamon for the filling.
  5. For the crumble topping, combine the brown sugar, almond flour, oat flour, and cinnamon with the room-temperature butter using your hands or a fork to form a crumbly mixture. Set aside.
  6. Grease or line an 8″x8″ baking dish. Pour half of the cake batter into the dish, spreading it evenly.
  7. Sprinkle half of the cinnamon sugar filling on top and gently swirl it into the batter.
  8. Spread the remainder of the cake batter over the filling, followed by the remaining cinnamon sugar filling. Swirl it into the top.
  9. Bake for 25 minutes.
  10. Remove from the oven and sprinkle the crumble topping gently over the surface. Press it slightly, especially in the center where it will still be underbaked.
  11. Bake for an additional 18 minutes or until a toothpick comes out clean.
  12. Let cool completely before cutting into squares. Enjoy!
