- 1/2 cup salted butter, softened
- 2/3 cup applesauce
- 2 large eggs
- 1 cup white sugar
- 2 tsp vanilla extract
- 1 cup almond flour
- 1 1/4 cup oat flour
- 2 tsp baking powder
- 1/4 tsp salt
- 2 tbsp salted butter, melted (for filling)
- 1 tbsp oat flour (for filling)
- 2 tbsp white sugar (for filling)
- 1/2 tbsp cinnamon (for filling)
- 1/4 cup salted butter, slightly softened (for crumble topping)
- 1/4 cup light brown sugar (for crumble topping)
- 1/4 cup almond flour (for crumble topping)
- 1/2 cup oat flour (for crumble topping)
- 2 tsp cinnamon (for crumble topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened butter, applesauce, eggs, sugar, and vanilla extract. Mix until smooth.
- Add in the almond flour, oat flour, baking powder, and salt. Blend until the batter is uniform.
- In a separate bowl, mix the melted butter, oat flour, white sugar, and cinnamon for the filling.
- For the crumble topping, combine the brown sugar, almond flour, oat flour, and cinnamon with the room-temperature butter using your hands or a fork to form a crumbly mixture. Set aside.
- Grease or line an 8″x8″ baking dish. Pour half of the cake batter into the dish, spreading it evenly.
- Sprinkle half of the cinnamon sugar filling on top and gently swirl it into the batter.
- Spread the remainder of the cake batter over the filling, followed by the remaining cinnamon sugar filling. Swirl it into the top.
- Bake for 25 minutes.
- Remove from the oven and sprinkle the crumble topping gently over the surface. Press it slightly, especially in the center where it will still be underbaked.
- Bake for an additional 18 minutes or until a toothpick comes out clean.
- Let cool completely before cutting into squares. Enjoy!
