Ingredients

- 2 cups fresh strawberries, hulled (about 300 g)
- 2 tablespoons honey or maple syrup
- 2 tablespoons lemon juice (freshly squeezed)
- 3 tablespoons gelatin powder (unflavored)
- 1/4 cup water (60 ml)
Instructions
- Puree the strawberries in a blender until smooth. Strain through a fine-mesh sieve if you prefer very clear gummies.
- In a small saucepan, combine the strawberry puree, honey or maple syrup, lemon juice, and water over medium heat. Warm gently until steaming but not boiling.
- Remove from heat and gradually whisk in the gelatin powder until completely dissolved and smooth.
- Pour the mixture into silicone molds or a shallow baking dish. Tap molds lightly to release any air bubbles.
- Refrigerate for about 2–3 hours or until fully set.
- Once set, gently unmold the gummies and enjoy!
Notes
For vegan options, substitute agar-agar. Ensure not to boil the gelatin as it affects texture. Use ripe strawberries for best flavor.
