Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease. Add taco seasoning and 1/4 cup of water; simmer for 5 minutes.
  2. Heat tortillas in a dry skillet or wrap them in a damp paper towel and microwave for 15-30 seconds until pliable.
  3. Lay a tortilla flat and layer with rice, seasoned beef, nacho cheese, chipotle sauce, and sour cream. Top with shredded cheddar and mozzarella cheese.
  4. Heat a clean skillet and sprinkle 2 tbsp of shredded cheese in the pan. Place the burrito seam-side down and cook until the cheese melts and forms a crispy crust, about 3-4 minutes. Flip and repeat the process on the other side.

Notes

For a healthier option, consider ground turkey and vegan cheese. Enjoy it with guacamole and salsa or as part of a larger Mexican-themed spread.
