A hearty, colorful power bowl featuring grilled chicken, crispy sweet potato fries, and creamy guacamole, perfect for a nutritious meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 medium sweet potato
  • 1 ripe avocado
  • 1 lime
  • 1 cup cooked quinoa
  • 1 cup fresh spinach
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash the sweet potato and cut it into fries. In a bowl, toss sweet potato fries with olive oil, cumin, paprika, salt, and pepper until evenly coated.
  3. Spread fries on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway.
  4. While the fries are baking, season the chicken breasts with salt, pepper, and any additional spices.
  5. Grill the chicken on medium-high heat for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  6. In a bowl, mash the avocado, squeeze in lime juice, and season with salt.
  7. Assemble your power bowls with layers of cooked quinoa, spinach, grilled chicken, and sweet potato fries. Top with guacamole.
  8. Serve immediately and enjoy!

Notes

For juicier chicken, consider marinating for 30 minutes. You can also use frozen sweet potato fries.
