- 2 boneless, skinless chicken breasts
- 1 medium sweet potato
- 1 ripe avocado
- 1 lime
- 1 cup cooked quinoa
- 1 cup fresh spinach
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 425°F (220°C).
- Wash the sweet potato and cut it into fries. In a bowl, toss sweet potato fries with olive oil, cumin, paprika, salt, and pepper until evenly coated.
- Spread fries on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway.
- While the fries are baking, season the chicken breasts with salt, pepper, and any additional spices.
- Grill the chicken on medium-high heat for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
- In a bowl, mash the avocado, squeeze in lime juice, and season with salt.
- Assemble your power bowls with layers of cooked quinoa, spinach, grilled chicken, and sweet potato fries. Top with guacamole.
- Serve immediately and enjoy!
Notes
For juicier chicken, consider marinating for 30 minutes. You can also use frozen sweet potato fries.
