- 2 cups almond milk (or any plant-based milk)
- 1 cup fresh or frozen blueberries
- 1/4 cup maple syrup or agave syrup
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine rolled oats, baking powder, cinnamon, and salt.
- In another bowl, whisk together almond milk, maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Gently fold in the blueberries.
- Pour the mixture into a greased baking dish (8×8-inch or similar).
- Bake for about 30–35 minutes or until the top is golden brown and the center is set.
- Let it cool slightly before serving. Enjoy your healthy breakfast!
Notes
For extra creaminess, stir in Greek yogurt before serving. This dish can also be frozen in individual portions for a quick breakfast-on-the-go.
