- 1 lb (450g) boneless, skinless chicken breast
- 2 medium sweet potatoes
- 1 cup brown rice (or any rice of choice)
- 2 tablespoons olive oil (divided)
- Salt and pepper to taste
- 1 teaspoon paprika or garlic powder (optional)
- 2 cups greens (such as spinach or kale)
- 2 green onions (chopped, for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes. Toss them in 1 tablespoon of olive oil, salt, and pepper, and spread them on a baking sheet. Roast for about 25-30 minutes, or until tender.
- While sweet potatoes are roasting, cook the rice according to package instructions.
- Season the chicken breast with the remaining olive oil, salt, pepper, and any optional spices. Cook in a skillet over medium heat for about 6-7 minutes per side until fully cooked.
- Once everything is cooked, assemble the bowl: start with a base of rice, add the roasted sweet potatoes, sliced chicken, and top with greens.
- Garnish with chopped green onions. Serve warm and enjoy!
Notes
For extra flavor, consider adding a drizzle of balsamic glaze, feta cheese, or toasted nuts as toppings. Store leftovers in an airtight container for up to 4 days in the fridge.
