Ingredients

  • 2 medium sweet potatoes

  • 2 tablespoons olive oil (divided)

  • 1 teaspoon paprika or garlic powder (optional)
  • 2 cups greens (such as spinach or kale)
  • 2 green onions (chopped, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes. Toss them in 1 tablespoon of olive oil, salt, and pepper, and spread them on a baking sheet. Roast for about 25-30 minutes, or until tender.
  3. While sweet potatoes are roasting, cook the rice according to package instructions.
