Wholesome, no-bake peanut butter oat cups that combine the creamy texture of peanut butter with chewy oats and crunchy dark chocolate, perfect for breakfast or a snack.

- 1 cup natural peanut butter (preferably unsweetened, stirred)
- 2 cups rolled oats
- 1/4 cup dark chocolate, chopped
- 1/4 cup honey or maple syrup (optional)
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a mixing bowl, combine the natural peanut butter, honey (if using), and vanilla extract. Stir until smooth.
- Add the rolled oats, chopped dark chocolate, and a pinch of salt. Mix until fully combined.
- Line a muffin tin with paper liners or grease it lightly.
- Spoon the mixture into the muffin cups, pressing down gently to compact each cup.
- Refrigerate for at least 30 minutes until firm.
- Store the cups in an airtight container in the fridge.
Notes
For a nut-free version, substitute sunflower seed butter. They can also be frozen for up to 3 months.
