- 2 large sweet potatoes (about 600 g total), peeled and grated
- 1 small onion, finely chopped (about 70 g)
- 2 tablespoons extra-virgin olive oil
- Salt and black pepper, to taste
- Optional: 1/2 teaspoon garlic powder, 1/2 teaspoon smoked paprika, or 1 tablespoon chopped fresh herbs (thyme or parsley)
Instructions
- Peel and grate the sweet potatoes using a box grater or food processor. Squeeze out excess moisture.
- Transfer the grated sweet potato to a bowl and mix with the finely chopped onion and optional seasonings.
- Heat olive oil in a skillet over medium heat until shimmering.
- Spread the mixture evenly in the skillet; form into patties if desired.
- Season with salt and pepper and let cook undisturbed for 5–7 minutes until golden brown.
- Flip the hash browns and cook another 5–7 minutes until crisp on the other side.
- Check for doneness and serve immediately, garnished as desired.
Notes
For best results, ensure sweet potatoes are well-drained for maximum crispiness.
