- 8 chicken drumsticks
- 2 tablespoons olive oil
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 medium potatoes, cubed
- 2 cups mixed vegetables (carrots, bell peppers, zucchini)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine olive oil, thyme, rosemary, garlic powder, salt, and pepper.
- Add chicken drumsticks to the bowl and toss until they are evenly coated with the herb mixture. Place the drumsticks on a baking sheet.
- In the same bowl, add the cubed potatoes and mixed vegetables. Toss them with any remaining oil and herbs. Spread them around the chicken on the baking sheet.
- Roast everything in the preheated oven for 35-40 minutes, or until the chicken is fully cooked (internal temperature should read 165°F or 75°C) and the potatoes are golden brown and tender.
- Garnish with fresh parsley before serving.
Notes
For even cooking, arrange the drumsticks and vegetables in a single layer on the baking sheet. Use a meat thermometer to check the doneness of the chicken.
