Ingredients

  • 8 chicken drumsticks
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 medium potatoes, cubed
  • 2 cups mixed vegetables (carrots, bell peppers, zucchini)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine olive oil, thyme, rosemary, garlic powder, salt, and pepper.
  3. Add chicken drumsticks to the bowl and toss until they are evenly coated with the herb mixture. Place the drumsticks on a baking sheet.
  4. In the same bowl, add the cubed potatoes and mixed vegetables. Toss them with any remaining oil and herbs. Spread them around the chicken on the baking sheet.
  5. Roast everything in the preheated oven for 35-40 minutes, or until the chicken is fully cooked (internal temperature should read 165°F or 75°C) and the potatoes are golden brown and tender.
  6. Garnish with fresh parsley before serving.

For even cooking, arrange the drumsticks and vegetables in a single layer on the baking sheet. Use a meat thermometer to check the doneness of the chicken.
