Herby ricotta stuffed peppers combine creamy ricotta with vibrant herbs for an elegant and delicious dish perfect for gatherings or weeknight dinners.

- 4 bell peppers (any color)
- 1 cup ricotta cheese
- 1/2 cup grated parmesan cheese
- 1/4 cup fresh herbs (basil, parsley, or thyme)
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a medium bowl, combine the ricotta, parmesan, fresh herbs, garlic, salt, and pepper. Mix until well integrated.
- Stuff each bell pepper with the ricotta mixture.
- Arrange the peppers upright in a baking dish and drizzle with olive oil.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until tender and golden.
- Serve warm as a side dish.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. Reheat and enjoy!
