Description

Herby ricotta stuffed peppers combine creamy ricotta with vibrant herbs for an elegant and delicious dish perfect for gatherings or weeknight dinners.


Ingredients

Scale
  • 4 bell peppers (any color)
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1/4 cup fresh herbs (basil, parsley, or thyme)
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a medium bowl, combine the ricotta, parmesan, fresh herbs, garlic, salt, and pepper. Mix until well integrated.
  4. Stuff each bell pepper with the ricotta mixture.
  5. Arrange the peppers upright in a baking dish and drizzle with olive oil.
  6. Cover the dish with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes until tender and golden.
  8. Serve warm as a side dish.

Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. Reheat and enjoy!
