Ingredients

  • 1 lb (450 g) chicken breast tenders
  • 1/2 cup (60 g) all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups (about 180 g) breadcrumbs
  • 1 tsp kosher salt, divided
  • 1/2 tsp freshly ground black pepper, divided
  • 2 tbsp olive oil
  • Optional: 1 tsp garlic powder, 1 tsp smoked paprika, 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Set up a breading station: place flour in one bowl, beaten egg in another, and breadcrumbs mixed with 1/2 tsp salt and 1/4 tsp pepper in a third.
  3. Pat chicken tenders dry and season with remaining salt and pepper.
  4. Coat chicken tenders in flour, dip in egg, and coat with breadcrumbs, pressing gently to adhere.
  5. Arrange on prepared baking sheet and drizzle with olive oil.
  6. Bake for 15–20 minutes, turning halfway through, until golden brown and cooked through.
  7. Let rest for 2 minutes before serving.

Notes

To add more flavor, consider marinating in buttermilk or using various seasoning options. Avoid overcrowding the pan to ensure crispiness.
