Ingredients

  • 1 large egg
  • 2 tablespoons honey
  • 3/4 cup thick Greek yogurt
  • 1 teaspoon pure vanilla extract
  • 1/2 cup extra-virgin olive oil
  • 1 cup plain flour
  • 1/2 cup vanilla-flavored protein powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 10 oz fresh blueberries

Instructions

  1. Preheat your oven to 360°F (180°C).
  2. In a large mixing bowl, combine the egg, honey, Greek yogurt, vanilla extract, and olive oil. Whisk until smooth.
  3. Add in the plain flour, protein powder, baking powder, and baking soda. Stir until just combined.
  4. Gently fold in the fresh blueberries.
  5. Spoon the batter into a lined muffin pan, distributing evenly to yield 12 muffins.
  6. Bake in the center of the oven for 15-20 minutes, or until a toothpick inserted comes out clean.
  7. Allow muffins to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
