Ingredients

  • 2 cups rolled oats
  • 1 cup nuts (e.g., almonds, walnuts), chopped
  • 1/2 cup seeds (e.g., pumpkin seeds, sunflower seeds)
  • 1/2 cup dried fruit (e.g., raisins, cranberries)
  • 1/2 cup honey or maple syrup
  • 1/4 cup nut butter (e.g., almond butter, peanut butter)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, and dried fruit.
  3. In a small saucepan over low heat, mix honey (or maple syrup) with nut butter until warm and well combined. Remove from heat and stir in vanilla extract and salt.
  4. Pour this mixture into the dry ingredients and mix well until everything is coated.
  5. Transfer the mixture to the prepared baking dish and press down evenly.
  6. Bake for 20-25 minutes or until golden brown.
  7. Let cool completely before cutting into bars.

Notes

For best texture, do not overmix. Store bars in an airtight container for up to 5 days at room temperature, 2 weeks in the refrigerator, or freeze for up to 3 months.
