Ingredients

- 2 cups rolled oats
- 1 cup nuts (e.g., almonds, walnuts), chopped
- 1/2 cup seeds (e.g., pumpkin seeds, sunflower seeds)
- 1/2 cup dried fruit (e.g., raisins, cranberries)
- 1/2 cup honey or maple syrup
- 1/4 cup nut butter (e.g., almond butter, peanut butter)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
- In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, and dried fruit.
- In a small saucepan over low heat, mix honey (or maple syrup) with nut butter until warm and well combined. Remove from heat and stir in vanilla extract and salt.
- Pour this mixture into the dry ingredients and mix well until everything is coated.
- Transfer the mixture to the prepared baking dish and press down evenly.
- Bake for 20-25 minutes or until golden brown.
- Let cool completely before cutting into bars.
Notes
For best texture, do not overmix. Store bars in an airtight container for up to 5 days at room temperature, 2 weeks in the refrigerator, or freeze for up to 3 months.
