  • 2 tablespoons balsamic vinegar

  • Salt and freshly ground black pepper to taste
  • Optional garnishes: Chopped fresh parsley or toasted sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and trim the green beans, snapping off the stem ends. If using whole carrots, peel and cut them into roughly 1-inch thick pieces.
  2. In a small bowl, whisk together the olive oil, honey, balsamic vinegar, minced garlic, dried thyme, salt, and black pepper until well combined.
  3. In a large bowl, combine the carrots and green beans. Pour the honey glaze over them and toss gently to ensure even coverage.
  4. Spread the coated vegetables in a single layer on a large baking sheet. Avoid overcrowding to ensure proper roasting.
  5. Roast for 20-25 minutes, checking for tenderness as you go.
  6. For extra caramelization, broil for the last 1-2 minutes, watching closely to prevent burning.
  7. Allow the vegetables to rest for a minute before serving. Garnish with fresh parsley or toasted sesame seeds.
