- 4 salmon fillets
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 pound green beans, trimmed
- 2 tablespoons olive oil
- 4 medium potatoes, diced
- Salt and pepper to taste
- Fresh lemon wedges for serving
Instructions
- Preheat the oven to 425°F (220°C).
- In a small bowl, whisk together honey, soy sauce, and minced garlic to create the glaze.
- Place the salmon fillets on a baking sheet lined with parchment paper and brush them generously with the honey glaze.
- In another bowl, toss the diced potatoes with olive oil, salt, and pepper. Spread them out evenly on the baking sheet alongside the salmon.
- Bake for 10 minutes.
- After 10 minutes, add the green beans to the baking sheet. Toss them with olive oil, salt, and pepper, then return everything to the oven for an additional 10 minutes or until the salmon is cooked through and the vegetables are tender.
- Serve the salmon with the crispy potatoes and garlic green beans, garnished with fresh lemon wedges.
Notes
For a vegan alternative, use grilled tofu or chickpea patties with maple syrup instead of honey.
