Description

Aromatic, caramelized honey mustard chicken thighs that are both comforting and sophisticated, perfect for any occasion.


Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with foil or parchment and place a wire rack on top.
  2. Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, garlic powder, and onion powder.
  3. In a small bowl, whisk together honey, Dijon mustard, and olive oil until smooth. Reserve about 2 tablespoons of the glaze.
  4. Place thighs skin-side up on the rack. Brush generously with the honey-mustard glaze.
  5. Roast for 30-35 minutes or until the internal temperature reaches 165°F (74°C). Baste with more glaze halfway through.
  6. For extra-crispy skin, broil for the final 2-3 minutes, watching closely. Let rest for 5 minutes, then brush with reserved glaze and garnish with parsley before serving.

Notes

Best served over mashed potatoes or quinoa. Works great in sandwiches or wraps with slaw.
