Ingredients

  • 1/2 cup butter, melted
  • 4 large apples, peeled and sliced
  • 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1 cup rolled oats
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form a solid crust.
  3. In another bowl, combine the sliced apples, sugar, and cinnamon, tossing until evenly coated. Spread the apple mixture evenly over the prepared crust.
  4. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sour cream, sugar, and vanilla extract, mixing until well combined. Then add the eggs, one at a time, mixing on low speed until just blended.
  5. Pour the cream cheese mixture over the apples, ensuring an even layer.
  6. In a separate bowl, mix the rolled oats, brown sugar, and melted butter until crumbly. Sprinkle this mixture evenly over the cheesecake layer.
  7. Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center has a slight jiggle.
  8. Allow the cheesecake to cool at room temperature for about 1 hour, then refrigerate for at least 4 hours (or overnight) before serving.
