Ingredients

- 2 lbs beef chuck, cut into chunks
- 4 potassium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 bay leaves
- 1 tsp dried oregano
- 1 tsp thyme
- Salt and pepper, to taste
- Olive oil, for browning the beef
Instructions
- In a large pot, heat olive oil over medium heat. Brown the beef chunks on all sides.
- Remove the beef and set aside, then add the chopped onion and minced garlic to the same pot. Sauté until translucent.
- Add sliced carrots and diced potatoes; stir to combine and cook for 2–3 minutes.
- Return the beef to the pot, pour in the beef broth and wine (if using), and add bay leaves, oregano, thyme, salt, and pepper. Stir gently.
- Bring to a boil, then reduce heat to low and cover. Simmer for 1.5 to 2 hours until the beef is fork-tender.
- Adjust seasoning before serving — add more salt/pepper if needed, remove bay leaves, and serve warm.
Notes
For low-sodium options, use low-sodium beef broth and adjust seasoning as needed. This stew thickens and tastes even better the next day.
