Description
A delicious creamy pasta dish with shrimp, infused with Jamaican spices and coconut milk.

- 8 ounces fettuccine or linguine pasta
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (red or yellow)
- 1 can (14 ounces) coconut milk
- 1 tablespoon Jamaican jerk seasoning
- 1 tablespoon fresh lime juice
- Salt and pepper, to taste
- 1/4 cup fresh cilantro, chopped (for garnish)
- Lime wedges, for serving
- Optional: 1/2 cup cherry tomatoes, halved
- Optional: 1/2 teaspoon red pepper flakes for extra heat
Instructions
- In a large pot, bring salted water to a boil. Add the fettuccine or linguine and cook according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large pan over medium heat. Add chopped onion and sauté until translucent, about 3–4 minutes. Stir in the minced garlic and cook for an additional minute.
- Increase the heat to medium-high and add the shrimp to the pan. Season with salt and pepper. Cook for 2–3 minutes, or until the shrimp turn pink and opaque.
- Add the diced bell pepper (and cherry tomatoes, if using) and stir for another 2 minutes until they begin to soften.
- Pour in the coconut milk and stir in the Jamaican jerk seasoning and lime juice. Allow to simmer for 5 minutes, letting the flavors meld.
- Gently fold in the cooked pasta until evenly coated. If the sauce is too thick, add a splash of pasta water to achieve your desired consistency.
- Remove from heat, top with fresh cilantro, and serve immediately with lime wedges on the side.
Notes
Avoid overcooking shrimp; they should be just pink and firm but not rubbery. Taste and adjust seasoning before serving; sometimes a little extra lime juice can really brighten the dish.
