Description

A delicious creamy pasta dish with shrimp, infused with Jamaican spices and coconut milk.


Ingredients

  • 8 ounces fettuccine or linguine pasta
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (red or yellow)
  • 1 can (14 ounces) coconut milk
  • 1 tablespoon Jamaican jerk seasoning
  • 1 tablespoon fresh lime juice
  • Salt and pepper, to taste
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Lime wedges, for serving
  • Optional: 1/2 cup cherry tomatoes, halved
  • Optional: 1/2 teaspoon red pepper flakes for extra heat

Instructions

  1. In a large pot, bring salted water to a boil. Add the fettuccine or linguine and cook according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add chopped onion and sauté until translucent, about 3–4 minutes. Stir in the minced garlic and cook for an additional minute.
  3. Increase the heat to medium-high and add the shrimp to the pan. Season with salt and pepper. Cook for 2–3 minutes, or until the shrimp turn pink and opaque.
  4. Add the diced bell pepper (and cherry tomatoes, if using) and stir for another 2 minutes until they begin to soften.
  5. Pour in the coconut milk and stir in the Jamaican jerk seasoning and lime juice. Allow to simmer for 5 minutes, letting the flavors meld.
  6. Gently fold in the cooked pasta until evenly coated. If the sauce is too thick, add a splash of pasta water to achieve your desired consistency.
  7. Remove from heat, top with fresh cilantro, and serve immediately with lime wedges on the side.

Notes

Avoid overcooking shrimp; they should be just pink and firm but not rubbery. Taste and adjust seasoning before serving; sometimes a little extra lime juice can really brighten the dish.
