Description
A refreshing and hydrating salad featuring cucumbers, creamy mozzarella, and cherry tomatoes, finished with fresh basil and a balsamic drizzle.
Ingredients

- 2 English cucumbers (about 400 g total), thinly sliced
- 1 pint (about 250 g) cherry tomatoes, halved
- 8 oz (225 g) fresh mozzarella, torn into bite-sized pieces
- 1 cup fresh basil leaves (loosely packed)
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar (or to taste)
- 1/2 teaspoon flaky sea salt, plus more to taste
- Freshly ground black pepper, to taste
Instructions
- Slice the cucumbers and arrange them on a serving plate.
- Halve the cherry tomatoes and add them to the plate.
- Tear the fresh mozzarella into bite-sized pieces and scatter them over the cucumbers and tomatoes.
- Add the fresh basil leaves on top.
- Drizzle with olive oil and balsamic vinegar.
- Season with salt and pepper to taste.
- Serve immediately.
Notes
Dress just before serving to avoid soggy cucumbers. If making ahead by 30–60 minutes, store components separately and assemble just before serving.
