Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1/2 cup unsalted butter, softened (113 g)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Zest of 1 lemon
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes with a mixer).
  3. Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined.
  4. In a separate bowl, whisk together the oats, all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10–12 minutes or until the edges are lightly golden and centers look set.
  8. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before serving.

Notes

These cookies are moderate in calories and sugar. Oat substitutions can lower calories and fat. For vegan versions, use a plant-based butter substitute and a flax egg.
