  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice (about 1 large lemon)
  • 1 tablespoon lemon zest (zest from 1 lemon)
  • 1 tablespoon freshly ground black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon kosher salt (adjust to taste)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and heat an ovenproof skillet over medium-high heat.
  2. Pat chicken thighs dry with paper towels to ensure crisp skin.
  3. In a small bowl, combine lemon zest, lemon juice, black pepper, garlic powder, and salt. Rub olive oil over chicken and coat each thigh with the seasoning mixture.
  4. When the skillet is hot, sear thighs skin-side down for 5–7 minutes until golden and skin releases from the pan.
  5. Flip thighs skin-side up, transfer the skillet to the oven, and roast for 20–25 minutes until the internal temperature reaches 165°F (74°C).
  6. Let rest for 5 minutes, then garnish with parsley and serve.

Notes

For best results, avoid overcrowding the pan while searing. Use fresh lemon zest and black pepper for optimal flavor.
