Ingredients

  • 1 lb ground beef
  • 1/2 cup diced onion
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 cups uncooked macaroni
  • 2 tbsp butter
  • 2 cups milk
  • 1/2 tsp paprika
  • 1/2 tsp dry mustard
  • 2 tbsp flour
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine ground beef, diced onion, breadcrumbs, egg, milk, salt, and pepper. Mix well to blend all ingredients.
  3. Press the meat mixture into a greased baking dish.
  4. Bake the meatloaf for 20 minutes.
  5. Meanwhile, cook macaroni according to package directions; drain and set aside.
  6. In a saucepan over medium heat, melt butter. Stir in flour and cook for one minute.
  7. Gradually whisk in milk until the mixture thickens; add salt, pepper, paprika, and dry mustard.
  8. Stir in shredded cheese until melted and creamy.
  9. Combine the cooked macaroni with the cheese sauce and pour it over the meatloaf layer. Top with remaining cheese.
  10. Bake for an additional 25 minutes or until cheese is bubbly and golden on top.

Notes

Avoid overmixing the beef mixture to keep the meatloaf tender. Check for doneness with a meat thermometer: 160°F (71°C) indicates proper cooking for ground beef.
