Description
A delightful dessert that combines the vibrancy of lemon with a comforting texture, perfect for any occasion.
Ingredients
Scale
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1 cup granulated sugar (for the topping)
- 1 cup water
- Nuts (e.g., walnuts or pecans for a crunchy topping, optional)
- Alternative flours (e.g., almond flour for a gluten-free option, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish (either 9×9 inches or similar).
- In a mixing bowl, combine the flour, 1 cup of sugar, melted butter, milk, baking powder, and salt. Stir until the mixture is smooth and well-combined.
- Pour the batter into the greased baking dish, spreading evenly.
- In a separate bowl, mix the lemon juice, lemon zest, and remaining 1 cup of sugar with the water. Pour this mixture over the batter. Important: Do not stir; allow it to form its own layers.
- Bake for 40-45 minutes, or until the top is golden brown and set. A toothpick inserted should come out clean.
- Allow to cool slightly. Serve warm, optionally topped with whipped cream or ice cream.
Notes
Avoid overmixing the batter to ensure a tender cobbler. For an added depth of flavor, mix in vanilla extract.
