Description

A comforting maple banana bread that combines warm maple, ripe banana, and optional nutty crunch for a crowd-pleasing treat.


Ingredients

  • 3 ripe bananas, mashed (about 1 1/2 cups)
  • 1/2 cup pure maple syrup
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • 1 1/2 cups (180 g) all-purpose flour
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mash the bananas until mostly smooth with a few small chunks.
  3. Stir in the maple syrup, vegetable oil, beaten egg, and vanilla extract until combined.
  4. Add the baking soda, salt, and cinnamon (if using). Mix briefly.
  5. Fold in the flour until just combined—do not overmix.
  6. Gently fold in walnuts and/or chocolate chips if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes, or until a toothpick comes out with a few moist crumbs.
  9. Cool in the pan for 10–15 minutes, then lift out using the parchment and cool completely before slicing.

Notes

Use very ripe bananas for the best flavor. Wrap slices individually for freezing.
