Instructions

  1. Make the crust: Combine crushed graham crackers and melted butter in a bowl and mix until moistened. Press into a pie dish and refrigerate.
  2. Prepare the ganache: Heat cream until simmering, pour over chocolate chips, let sit, then whisk until smooth and cool.
  3. Cream the cheese: Beat cream cheese, powdered sugar, and vanilla until smooth.
  4. Sweeten and fold: Gently fold the cooled ganache into the cream cheese mixture until combined.
  5. Stabilize with whipped topping: Fold in whipped topping until light and uniform.
  6. Assemble: Pour filling into the crust and smooth the top.
  7. Chill: Refrigerate for 2–4 hours, preferably overnight.
  8. Garnish and serve: Dust with cocoa or sprinkle chocolate shavings before serving.
