A refreshing salad combining chickpeas, cherry tomatoes, cucumbers, and feta cheese with a zesty lemon-dill dressing, perfect for hot summer days.


Ingredients

  • 2 cans (15 oz each) chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped
  • Zest and juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: 1 bell pepper, diced
  • Optional: Kalamata olives, pitted and sliced
  • Optional: Avocado, diced

Instructions

  1. In a large mixing bowl, combine the rinsed chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
  2. In a small bowl, whisk together the lemon zest, lemon juice, olive oil, dried oregano, salt, and pepper.
  3. Pour the dressing over the chickpea mixture and toss gently until everything is well coated.
  4. Sprinkle feta cheese over the top before serving.
  5. Taste and adjust seasoning if necessary. Chill for about 15 minutes to let the flavors meld together.
