- 2 cans (15 oz each) chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ cup red onion, finely chopped
- ½ cup feta cheese, crumbled
- ¼ cup fresh parsley, chopped
- Zest and juice of 1 lemon
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Optional: 1 bell pepper, diced
- Optional: Kalamata olives, pitted and sliced
- Optional: Avocado, diced
Instructions
- In a large mixing bowl, combine the rinsed chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together the lemon zest, lemon juice, olive oil, dried oregano, salt, and pepper.
- Pour the dressing over the chickpea mixture and toss gently until everything is well coated.
- Sprinkle feta cheese over the top before serving.
- Taste and adjust seasoning if necessary. Chill for about 15 minutes to let the flavors meld together.
