- 24 rectangular wafer cookies
- 1 cup creamy peanut butter
- 1/4 cup powdered sugar
- 2 tablespoons salted butter, softened
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil (optional)
- Handful of roasted peanuts, chopped (optional)
Instructions
- Line a baking sheet with parchment paper and set it on a flat surface.
- In a bowl, mix creamy peanut butter, powdered sugar, and softened salted butter until smooth.
- Lay out half of the wafers on the prepared tray, flat side up. Spread a thin layer of the peanut butter mixture on each wafer.
- Top each peanut-buttered wafer with one of the remaining wafers to create sandwiches.
- Melt chocolate chips and coconut oil in a microwave or double boiler until smooth.
- Dip each wafer sandwich fully into the melted chocolate and place back onto the parchment-lined tray.
- Sprinkle chopped roasted peanuts on top while the chocolate is still wet.
- Chill the tray in the refrigerator for about 20 minutes.
- Slice or transfer individual sandwiches to an airtight container and serve.
