- 1 can (15 oz) red kidney beans, drained and rinsed
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 6 cups beef broth
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- 1 cup small pasta (like ditalini or elbow)
- Grated Parmesan cheese for serving
Instructions
- In a large pot, brown the ground beef and Italian sausage over medium heat. Drain excess fat.
- Add the chopped onion, celery, carrots, and minced garlic. Cook until the vegetables are tender, about 5-7 minutes.
- Stir in the kidney beans, cannellini beans, diced tomatoes (with their juices), tomato sauce, beef broth, and Italian seasoning. Bring to a boil.
- Reduce heat, cover, and let simmer for about 30 minutes.
- Add the pasta and cook according to package instructions until al dente, about 8-10 minutes.
- Season with salt and pepper to taste, and serve hot topped with freshly grated Parmesan cheese.
Notes
For deeper flavors, use bone broth or add a splash of red wine. Adjust the pasta cook time to maintain al dente texture.
