Description

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 2 cups chopped kale
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until softened, about 3-5 minutes.
  2. Pour in the chicken broth and water. Add the chopped kale, diced tomatoes, carrots, celery, and Italian seasoning to the pot.
  3. Bring the mixture to a boil, then reduce heat and let it simmer for 20-25 minutes or until the vegetables are tender.
  4. Season generously with salt and pepper to taste.
  5. Serve hot, topped with grated Parmesan cheese.
