Ingredients

- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups water
- 2 cups chopped kale
- 1 can (14.5 oz) diced tomatoes
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until softened, about 3-5 minutes.
- Pour in the chicken broth and water. Add the chopped kale, diced tomatoes, carrots, celery, and Italian seasoning to the pot.
- Bring the mixture to a boil, then reduce heat and let it simmer for 20-25 minutes or until the vegetables are tender.
- Season generously with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese.
