- 4 chicken thighs or breasts
- 1 cup of rice (or quinoa for a twist)
- 2 cups of chicken broth
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of mixed vegetables (e.g., peas, carrots, corn)
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large baking dish, drizzle olive oil and place the chicken.
- Add rice, chicken broth, chopped onion, minced garlic, mixed vegetables, paprika, salt, and pepper.
- Stir to combine everything well.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and rice is tender.
- Let it cool for a few minutes before serving.
Notes
Avoid overmixing to retain texture; check that chicken reaches an internal temperature of 165°F (75°C).
