Ingredients

  • 2 cups of chicken broth
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of mixed vegetables (e.g., peas, carrots, corn)
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, drizzle olive oil and place the chicken.
  3. Add rice, chicken broth, chopped onion, minced garlic, mixed vegetables, paprika, salt, and pepper.
  4. Stir to combine everything well.
  5. Cover the dish with foil and bake for 45 minutes.
  6. Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and rice is tender.
  7. Let it cool for a few minutes before serving.
