- 1 cup mozzarella cheese, shredded

Instructions
- In a large skillet, heat the olive oil over medium heat. Season the chicken breasts generously with salt and pepper, then place them into the skillet. Cook until browned on both sides (about 5 minutes per side).
- Pour in the balsamic vinegar, stirring to coat the chicken evenly. Add the halved cherry tomatoes on top.
- Cover the skillet and allow it to simmer for about 10-15 minutes, or until the chicken is cooked through and no longer pink in the center.
- Sprinkle the mozzarella cheese over the chicken. Cover the skillet again for a few minutes until the cheese is melted and bubbly.
- Remove from heat and garnish with freshly chopped basil before serving.
