  • 1 inch ginger, grated
  • 1 bell pepper, chopped
  • 1 carrot, sliced
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Optional: 1 diced potato or an extra chili pepper for added flavor

Instructions

  1. In a large pot, heat 2 tablespoons of oil over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger; sauté until the onion becomes translucent (about 3-4 minutes).
  3. Stir in the curry powder and cook for another minute, allowing the spices to bloom.
  4. Add the chicken pieces; brown them on all sides for 5-6 minutes.
  5. Toss in the chopped bell pepper and sliced carrot, stirring to combine.
  6. Pour in the coconut milk and chicken broth, bringing the mixture to a gentle simmer.
  7. Cover and cook for about 30 minutes, or until the chicken is thoroughly cooked.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh cilantro before serving.

Notes

For the best flavor, allow the chicken to marinate in spices for an hour before cooking. Store leftovers in an airtight container in the fridge for up to 3 days.
