- 2 slices of bread (sourdough or whole grain recommended)
- 2 slices of cheese (cheddar, mozzarella, or your favorite blend)
- 2 tablespoons of pesto (store-bought or homemade)
- Butter (for grilling)
Instructions
- Spread 1 tablespoon of pesto on one side of each slice of bread.
- On the non-pesto side of one slice, place a slice of cheese.
- Top with the second slice of bread, pesto side down.
- Heat a skillet over medium heat and add a pat of butter.
- Grill the sandwich for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Remove from heat, slice diagonally, and serve warm.
Notes
Keep the heat medium to avoid burning the bread before the cheese melts. Press gently with a spatula for a crispier texture.
