Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup shredded coconut (unsweetened recommended)
  • 1/2 cup powdered sugar
  • 23 tablespoons milk
  • Pink food coloring (a few drops, or until desired hue)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan, or line with parchment for easy removal.
  2. In a large bowl, whisk together the flour, cocoa powder, and salt until evenly combined.
  3. Add the granulated sugar, melted butter, eggs, and vanilla extract to the dry mixture. Stir until just combined, being careful not to overmix.
  4. Pour the batter into the prepared pan and smooth the top with a spatula for even baking.
  5. Bake for 20–25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Avoid overbaking.
  6. Allow the cake to cool completely in the pan on a wire rack.
  7. In a separate bowl, mix the shredded coconut with the powdered sugar. Add 2 tablespoons of milk and stir until you have a spreadable mixture; add more milk if needed.
  8. Stir in a few drops of pink food coloring until you reach your desired hue.
  9. Spread the pink coconut mixture evenly over the cooled cake, pressing lightly so it adheres. Cut into bars and serve.

Notes

Serve with a cup of coffee or tea, or pair with a scoop of vanilla ice cream for an indulgent treat.
