Description

Crispy pretzel-coated chicken breasts with a savory cheddar and Dijon-mayo layer that make for a delicious comfort food.


Ingredients

  • 4 chicken breasts (boneless, skinless)
  • 2 cups crushed pretzels
  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs
  • 1/2 cup Dijon mustard
  • 1/2 cup mayonnaise
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the Dijon mustard and mayonnaise until smooth.
  3. In another bowl, combine crushed pretzels, shredded cheddar, and breadcrumbs; mix well.
  4. Season the chicken breasts with salt and pepper.
  5. Dip each chicken breast in the mustard-mayo mixture, then press into the pretzel mixture to coat evenly.
  6. Place the coated chicken on a baking sheet lined with parchment or a lightly greased rack.
  7. Lightly spray the tops with cooking spray.
  8. Bake for 25–30 minutes, until chicken reaches an internal temperature of 165°F (74°C) and the coating is golden and crispy.

Notes

Use a meat thermometer to avoid overcooking. For extra-crispy finish, broil 1–2 minutes at the end. If using yogurt instead of mayo, add a teaspoon of oil for better adhesion.
