- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup fresh strawberries, pureed
- Optional: Fresh strawberries for topping
Instructions
- In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until crumbly.
- Press the crumb mixture firmly into the bottom of a springform pan to form the crust. Set aside.
- In another bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing thoroughly.
- In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Add the strawberry puree to the cream cheese mixture and stir until well incorporated.
- Pour the filling into the prepared crust, smoothing the top with a spatula.
- Chill in the refrigerator for at least 4 hours or overnight for best results.
- Before serving, garnish with fresh strawberries if desired.

Avoid overmixing the whipped cream with the cream cheese for a light texture.
