  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, pureed
  • Optional: Fresh strawberries for topping

Instructions

  1. In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until crumbly.
  2. Press the crumb mixture firmly into the bottom of a springform pan to form the crust. Set aside.
  3. In another bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing thoroughly.
  4. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture.
  5. Add the strawberry puree to the cream cheese mixture and stir until well incorporated.
  6. Pour the filling into the prepared crust, smoothing the top with a spatula.
  7. Chill in the refrigerator for at least 4 hours or overnight for best results.
  8. Before serving, garnish with fresh strawberries if desired.

Avoid overmixing the whipped cream with the cream cheese for a light texture.
