These energy bars are bursting with flavor, combining chewy dried apricots, crunchy nuts, and the warmth of ginger for a deliciously energizing snack.
Ingredients

- 1 cup dried apricots
- 1 cup nuts (almonds or cashews)
- 1/2 cup rolled oats
- 1/4 cup coconut flakes
- 1 tablespoon grated fresh ginger
- 1/4 cup honey or maple syrup
- 1/4 teaspoon salt
- Optional: Chia seeds, Dark chocolate chips
Instructions
- In a food processor, combine the dried apricots, nuts, rolled oats, coconut flakes, and salt.
- Pulse until the mixture is finely chopped and begins to clump together.
- Add the grated ginger and honey (or maple syrup), then pulse again until thoroughly combined.
- Transfer the mixture to a lined square pan and press it tightly into an even layer.
- Refrigerate for at least 2 hours or until firm.
- Cut into bars and enjoy!
Notes
Store in an airtight container at room temperature for up to 3 days or in the fridge for a week. For longer storage, freeze in a single layer for up to 3 months.
