  • 1/2 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped roasted red peppers, shredded mozzarella cheese, fresh basil, minced garlic, olive oil, salt, pepper, and Italian seasoning. Stir well to create a flavorful filling.
  3. Take each chicken breast and carefully slice into the thickest part to form a pocket, ensuring not to cut all the way through.
  4. Generously stuff each pocket with the roasted red pepper and cheese mixture, using toothpicks if necessary to secure the opening.
  5. Place the stuffed chicken breasts in a greased baking dish and drizzle with a bit more olive oil for added flavor.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (juices should run clear).
