- 2 1/4 cups (280 g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 tablespoon ground cinnamon
- 1/2 teaspoon fine sea salt (in dough)
- 3/4 cup (170 g) unsalted butter, softened
- 1/2 cup (100 g) granulated sugar
- 1/3 cup (113 g) honey
- 1 large egg, room temperature
- 1 teaspoon pure vanilla extract
- Flaky sea salt (for sprinkling)
Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and the 1/2 teaspoon fine sea salt. Set aside.
- In a large bowl or bowl of a stand mixer, cream the softened butter and granulated sugar together until light and fluffy (about 2–3 minutes).
- Beat in the honey until combined, then add the egg and vanilla and mix until smooth. Scrape down the sides as needed.
- Gradually mix the dry ingredients into the wet mixture on low speed (or fold in with a spatula) until just combined. Avoid overmixing; stop when you no longer see streaks of flour. The dough will be slightly sticky.
- Scoop dough by tablespoonfuls onto the prepared baking sheets, spacing about 2 inches apart. Flatten each mound slightly with the back of the scoop or your fingers.
- Bake for 10–12 minutes, until the edges are set and just beginning to brown but the centers still look slightly soft. Rotate the pans halfway through baking for even color.
- Remove from oven and immediately sprinkle each cookie lightly with flaky sea salt. Let the cookies cool 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.
Notes
Avoid overmixing after adding the flour for tender cookies. For softer cookies, bake closer to 10 minutes.
