- 2 medium zucchinis, sliced
- 8 oz mushrooms, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the garlic and sauté for about 30 seconds until fragrant.
- Add the sliced mushrooms and cook for about 5-7 minutes until softened.
- Add the sliced zucchinis, salt, and pepper. Cook for another 5-7 minutes, stirring occasionally, until the zucchinis are tender.
- Remove from heat and garnish with fresh parsley before serving.
Notes
For extra flavor, consider adding herbs like thyme or oregano, or different types of mushrooms. This dish is also vegan-friendly.
