Instructions
- In a slow cooker, mix together lemon juice and zest, olive oil, garlic, oregano, thyme, salt, and pepper.
- Add the chicken breasts and coat well with the mixture.
- Pour in the chicken broth and add rice and water.
- Stir everything to combine.
- Cover and cook on low for 4-6 hours or until chicken is cooked through.
- Fluff the rice with a fork before serving and garnish with fresh parsley.
