- 4 boneless, skinless chicken breasts
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chicken broth
- 1 cup rice
- Fresh herbs for garnish (optional)
Instructions
- In a slow cooker, combine lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper.
- Add the chicken breasts, making sure to coat each breast with the marinade evenly.
- Pour chicken broth over the chicken.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- About 30 minutes before serving, add rice to the slow cooker and stir.
- Cook until the rice is tender (the chicken will be nearly falling apart; that’s perfect!).
- Garnish with fresh herbs if desired and serve.
Notes
For best results, use fresh herbs whenever possible. Consider using pre-cooked rotisserie chicken added in the last 30 minutes for a quicker meal.
