Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chicken broth
  • 1 cup rice
  • Fresh herbs for garnish (optional)

Instructions

  1. In a slow cooker, combine lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper.
  2. Add the chicken breasts, making sure to coat each breast with the marinade evenly.
  3. Pour chicken broth over the chicken.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. About 30 minutes before serving, add rice to the slow cooker and stir.
  6. Cook until the rice is tender (the chicken will be nearly falling apart; that’s perfect!).
  7. Garnish with fresh herbs if desired and serve.

Notes

For best results, use fresh herbs whenever possible. Consider using pre-cooked rotisserie chicken added in the last 30 minutes for a quicker meal.
