- 1 cup almond flour
- 1/2 cup coconut sugar
- 1/4 cup matcha powder
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix together the almond flour, coconut sugar, matcha powder, baking powder, and salt. Whisk to combine and break up any clumps of matcha.
- In another bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until smooth.
- Combine wet and dry ingredients until a dough forms. If using add-ins, gently fold them in now.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving 1–2 inches between each.
- Bake for 10–12 minutes until the edges are lightly golden and the tops are slightly crinkled.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Avoid overmixing to keep cookies tender. If dough is sticky, refrigerate for easier scooping. For chewier cookies, flatten dough balls slightly before baking.
