- 12 jumbo pasta shells
- 1 cup ricotta cheese
- 1 cup fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1 egg
- Salt and pepper to taste
- Olive oil (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
- In a bowl, combine ricotta cheese, chopped spinach, Parmesan cheese, egg, salt, and pepper. Mix until well combined.
- Stuff each pasta shell with the ricotta mixture.
- Spread half of the marinara sauce on the bottom of a baking dish. Arrange the stuffed shells in the dish, seam side up.
- Pour the remaining marinara sauce over the shells and sprinkle with mozzarella cheese.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and slightly golden.
- Let cool for a few minutes before serving.
