- 2 lbs beef chuck, cut into cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, cubed
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons cornstarch (optional, for thickening)
Instructions
- In a large pot, heat the olive oil over medium-high heat.
- Add the beef cubes to the pot, browning them on all sides (5-7 minutes).
- Stir in the onions and garlic, cooking until the onions are translucent (3-4 minutes).
- Add the sliced carrots, cubed potatoes, beef broth, tomato paste, thyme, rosemary, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours until the beef is tender.
- If a thicker stew is desired, mix the cornstarch with a little water to make a slurry and stir into the stew. Cook for an additional 10 minutes.
- Serve hot, garnished with fresh herbs if desired.
Notes
For a richer flavor, consider adding a splash of red wine after browning the beef. Serve with crusty bread or a fresh salad for a complete meal.
