Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, cubed
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)

Instructions

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the beef cubes to the pot, browning them on all sides (5-7 minutes).
  3. Stir in the onions and garlic, cooking until the onions are translucent (3-4 minutes).
  4. Add the sliced carrots, cubed potatoes, beef broth, tomato paste, thyme, rosemary, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours until the beef is tender.
  6. If a thicker stew is desired, mix the cornstarch with a little water to make a slurry and stir into the stew. Cook for an additional 10 minutes.
  7. Serve hot, garnished with fresh herbs if desired.

Notes

For a richer flavor, consider adding a splash of red wine after browning the beef. Serve with crusty bread or a fresh salad for a complete meal.
